Cooking Without Whine: Trevor's Taco Salad

Trevor’s take on a classic taco salad!


Welcome back to Cooking Without Whine, our series of teaching videos, helping you prepare fresh and healthy meals at home. If you don't already know– our institutional sized kitchen on the MHAB Life Skills Campus is a space for life skills education, experimental cooking, and of course, a lot of fun. In the MHAB Kitchen, we prepare fresh baked goods, soups, sandwiches, and salads daily. Community dinners and private luncheons are regularly prepared here as well. Our head chef, Trevor, leads the way in providing fresh meals to the community and making sure our MHAB Fresh shop is always stocked with delicious, healthy eats.


Down below is our new episode of Cooking Without Whine, where you can learn from Trevor how to make a taco salad – all from inside our very own kitchen on MHAB Life Skills Campus. Watch the video to see how Trevor does it, and follow the recipe underneath to make your own at home!


Here is what you’ll need:

  • 1 lb. of Ground Beef

  • Frito Lay Scoops

  • 1 Head of Iceberg Lettuce

  • 1 Tomato

  • 1 Jalapeno Pepper

  • 1 Red Onion

  • 3 Scallions

  • 2 Tablespoons of Garlic Powder

  • 2 Tablespoons of Salt

  • 2 Tablespoons of Cumin

  • 2 Tablespoons of Chili Powder

  • 2 Tablespoons of Fresh Ground Pepper

  • 1 Tablespoon of Tajin Seasoning

  • 1.5 cups of your favorite Ranch Dressing

  • 4 Canned Chipotle Peppers

  • Shredded Mexican Cheese

  • 1 Lime

Let’s get started:


Ground Beef Instructions

  1. Chop half of red onion

  2. Brown 1 lb. of ground beef in a large skillet on medium heat

  3. Add Red Onion

  4. Add Cumin, Chili Powder, Garlic Powder, and Black Pepper

  5. Add Tajin seasoning just before completion

Chipotle Ranch Instructions

  1. Place 1.5 cups of ranch dressing with Chipotle Peppers in a food processor. Mix on Medium.

Vegetable Preparation

  1. Slice remaining red onion

  2. Shred Lettuce

  3. Chop Jalapeno Pepper

Plating Instructions

  1. Create a bed of shredded lettuce on bottom of plate

  2. Add Mexican Ground Beef

  3. Add Peppers

  4. Red Onion

  5. Dice Tomatoes

  6. Add Mexican Cheese

  7. Top with Scoops

  8. Color with Scallions

That’ll do, pig!
