Cooking Without Whine: Simple Greek Salad Dressing from the MHAB Kitchen

Today we're going to learn how to create a simple Greek Salad Dressing with fresh, natural ingredients in just 5 minutes.


We're excited to bring to you Cooking Without Whine, a new series of teaching videos from MHAB, helping you prepare fresh and healthy meals at home. If you don't already know– our institutional sized kitchen on the MHAB Life Skills Campus is a space for life skills education, experimental cooking, and of course, a lot of fun. In the MHAB Kitchen, we prepare fresh baked goods, soups, sandwiches, and salads daily. Community dinners and private luncheons are regularly prepared here as well. Our head chef, Trevor, leads the way in providing fresh meals to the community and making sure our MHAB Fresh shop is always stocked with delicious, healthy eats.


In the first teaching video of our Cooking Without Whine series, Trevor teaches us how to make Simple Greek Salad Dressing from inside the MHAB kitchen. Follow the recipe from Trevor below to make your own dressing at home.




Simple Greek Salad Dressing

Prep time: 5 min


Here's what you'll need:

  • 1 Clove Fresh Garlic

  • Juice of 1 Lemon

  • ⅓ - ½ Cup Red Wine Vinegar

  • 2 cups or so Olive oil

  • 1 teaspoon salt

  • 1 teaspoon freshly ground Black Pepper

  • 1 Tablespoon dried Oregano

  • A stick blender, food processor, or a whisk. Whichever you have at home.


A note from Trevor:

The Greeks have obviously been making dressing for a lot longer than we’ve had electric mixers so, clearly, you don’t need a stick blender (or a food processor or blender- which work equally well).
If you are a traditionalist- or if the power’s out and you’re doing this by candlelight- you can work on your forearm strength and make this in a mixing bowl and a wire whisk!

How to make it:

  1. First, coarse chop garlic into pitcher.

  2. Squeeze lemon into pitcher.

  3. Add vinegar.

  4. Spin constantly while and drizzling oil in slowly – this allows the acids and oils to emulsify into a smooth mixture.

  5. Add salt and pepper.

  6. Add oregano.


Et voila! There you have it, a super simple Greek salad dressing for you and your loved ones to enjoy at home without any of the unnatural additives you may find in bottled dressings at the grocery store.
